Oreo Cheese Cake Cups

Oreo Cheese Cake Cups

This is another quick and easy to whip dessert which will satisfy all your cheesecake urges. Serves about 8 people.

Ingredients

500 g (2 Pack) –  Thick Cream (I used PUCK)

500 g  – Cream Cheese (I used Kraft)

6-8 tbsp – Sugar (or more depending on your taste)

2 tsp – Vanilla Essense

1.5 packets – Jelly (I used Green’s, Mix Berry)

Pinch or two – Salt

2/3 cup – Hot Water

1 pack – Oreos crushed (I got the 24 pack)

100 g – Melted Butter

Method

Base

Open up the Oreo Cookies and separate the cream in them with a butter knife.

Crush the cookies in a processor or with a rolling pin.

Add the melted butter to the crushed cookies. You should be able to form a deformed ball when you fist the mixture. If it still falls apart add a bit more butter.

Place the mix at the bottom of your serving dish and press to form a flat surface.

You can also replace the Oreo base with jelly if you want.

Let set in the fridge for about 30 minutes.

Top

Place cream, cream cheese, sugar, vanilla essence and salt in a mixing bowl. Whip until soft peaks form.

Note: I like to stick the bowl in the Freezer for about 15 minutes before I start whipping to get perfect peaks. 

Once the cream mix is whipped.

In a separate bowl, take hot water and dissolve the packs of jelly in it.

Note: Jelly around the world are different. So one pack of jelly is good for one pack or two of cream in the UAE. You are looking for a creamy but firm texture after it is set, so if you feel the jelly wouldn’t hold the cream in the end or become too hard you can change the recipe accordingly.

To make it softer – add more water

To make it harder – add more jelly

Once the jelly dissolves, a clear solution should form, as you dissolve it the water should come down to room temperature, pour it into the cream mixture and whip once more until it’s incorporated fully. You will get a light coloured mixture, as we are using flavoured jelly. If you want you can add more colour to it.

Pour the cheese cream+ jelly mixture over the previously set Oreo base.

Let sit in the fridge.

P.S: Make this a day or two before it needs to be served. 

Top it up with some crushed Oreo and ENJOY!
